SW6 Assembly & Production Step-by-Step Assembly, Quality Checkpoints, Production Rate
Classic Grilled Cheese — Assembly SOP
SOP-SW-001 Rev 3  |  Rate: 400 sandwiches/hr (2-person team)  |  Room Temp: ≤50°F
1
Bread Prep
Lay out 2 slices whole wheat bread per sandwich on sanitized work surface. Verify bread freshness (best-by date ≥3 days out). Discard any slices with visible mold or damage.
QC CHECK: Bread date code verified at start of each case
2
Cheese Layup
Place 2 slices American cheese (1.5 oz total) on bottom bread slice. Cheese must be centered with no overhang. Log USDA lot number for traceability. Internal cheese temp must be ≤40°F.
QC CHECK: Cheese temp verified hourly, lot number logged
3
Butter Application
Apply butter pat (0.25 oz) to exterior of top bread slice. Close sandwich. Ensure even butter coverage for uniform grilling by end customer.
4
Wrap & Seal
Place assembled sandwich in printed film wrapper. Run through flow-wrap machine. Verify seal integrity visually — no open ends, no punctures. Wrapper must display allergen statement and heating instructions.
QC CHECK: Seal integrity test every 100 units
5
Label & Date Code
Apply product label with lot code (L260519-E1), best-by date, UPC, nutrition facts, and allergen statement. Run through metal detector. Scan label barcode for production count.
QC CHECK: Metal detector challenge test at start of each run
6
Case Pack & Cold Storage
Pack 48 wrapped sandwiches per case. Apply case label. Transfer immediately to cold storage (≤38°F). Log case count and storage location. Max time from assembly to cold storage: 20 minutes.
QC CHECK: Cold storage temp logged, case count verified
